Indonesian Sate

Forget bunging together some peanut butter and some soy sauce and then dipping some bits of pork in it. This authentic recipe came from a supermarket give away magazine and is the pukka thing. I don’t cook this, my wife does, and let me tell you it takes two days to prepare. But it’s worth it.

  • For the Marinade
  • 3 tbsp olive oil
  • 2 cloves of garlic - pressed
  • 1 tpsp corriander powder
  • 3 tbsp Ketjap Manis
  • ½ tbsp vinegar
  • For the Sate
  • 750 gms of pork shoulder - without the bone
  • 5 shallots - thinly sliced
  • 2 cloves garlic - thinly sliced
  • 125 ml of oive oil
  • ½ tbsp Sambal Oelek
  • 2 tbsp peanut butter with bits of nuts
  • 3 tbsp sate sauce - Wijko
  • 3 tbsp of Ketjap Manis
  • 2 tbsp fried onions from a packet or tub
  • salt
  • 1 tbsp lemon juice
  1. Mix all the ingredients for the marinade, Cut the meat into 1" to 1½" pieces and let them soak for about 4 hours or overnight.
  2. Heat the oil in a wok and add the thinly sliced garlic and shallots and fry until golden brown. Add the meat from the marinade a few pieces at a time. Cook for 1 hour stirring frequently, or until tender.
  3. Then add the Sambal Oelek, peanut butter, sate sauce, Ketjap Manis and the fried onions.
  4. Stir well and then add the salt and lemon juice.
  5. Serve with either boiled rice or crusty bread.
