Sweet Potato with Lemon and Oregano

My wife had never heard of sweet potato until I arrived in The Netherlands. Also unheard of was parsnips. Now both a firm favourite with her and the numerous friends she has told about these lovely vegetables.

Ingredients

  • 1 large sweet potato
  • 1 tsp of oregano
  • 2 tsp of olive oil
  • 1/2 lemon

Method

  1. Warm the oven to 220 deg. C.
  2. Cut the sweet potato into small wedges.
  3. Place on a baking tray and sprinkle with the oregano, olive oil and the juice of the lemon.
  4. Cook in the oven for around 20 minutes or until golden brown.
